  • 3 shallots

  • 15 oz marinara sauce
  • 10.5 oz pepperoni
  • 1½ cups flour (for dusting)
  • 4.5 oz buttermilk ranch dressing
  • 1.5 oz hot honey
  • Olive oil
  • Cooking oil
  • Salt & pepper

  • 3 cups mozzarella cheese

Base

  • 6 small pizza dough balls (about 3 oz each)

Instructions

Step 1: Prep Dough

  1. Adjust rack to the top position (or top and middle for larger batches). Preheat oven to 475°F (245°C).
  2. Lightly flour a clean surface and your hands.
  3. Shape each pizza dough ball into a round and sprinkle with flour.
  4. Cover with a clean kitchen towel and let rest for 20 minutes at room temperature.

Step 2: Prep Toppings

  1. While dough rests, wash and dry produce.
  2. Thinly slice shallots.
  3. Core, deseed, and dice green peppers into 1-inch pieces.
  4. Slice tomatoes into thin rounds.

Step 3: Shape & Assemble Pizzas

  1. Line baking sheets with parchment paper.
  2. Stretch dough balls into 10-inch ovals or circles.
  3. Spread marinara over each crust.
  4. Add mozzarella, shallots, peppers, tomato slices, and pepperoni.
  5. Drizzle edges with olive oil and season lightly with salt and pepper.

Step 4: Bake

  1. Bake pizzas on the top rack for 14–18 minutes, until crusts are golden and cheese is bubbly.
  2. (If baking multiple trays, swap rack positions halfway through.)

Step 5: Finish & Serve

  1. Drizzle pizzas with hot honey to taste.
  2. Slice into wedges.
  3. Serve with buttermilk ranch dressing for dipping.

Notes

  • Add crushed red pepper or chili flakes for extra heat.
  • Substitute mozzarella with provolone or Monterey Jack for variety.
  • For crispier crusts, pre-bake dough for 5 minutes before adding toppings.
