Overview

There’s just something so satisfying about a lettuce wrap: the crisp romaine crunch, the perfectly cradled filling, and that satisfied-but-not-stuffed feeling after dinner. This version features ground turkey seasoned with Turkish-inspired spices, garlic, and soy sauce, then topped with a fresh cucumber, tomato, and red onion salad, finished with feta and a sweet Greek vinaigrette. A refreshing, protein-packed meal you’ll want again and again.

Ingredients

Produce

  • 3 Persian cucumbers (quartered lengthwise, sliced into ½-inch pieces)
  • 3 Roma tomatoes (diced into ½-inch pieces)
  • 3 red onions (halved and finely chopped)
  • 6 cloves garlic (minced)
  • 3 stalks baby lettuce (leaves separated)

  • 4.5 oz Greek vinaigrette
  • 3 tbsp Turkish spice blend
  • 3 tbsp soy sauce
  • Olive oil
  • Salt & pepper

Dairy

  • 1.5 cups feta cheese

Protein

  • 24 oz ground turkey (93% lean preferred)

Instructions

Step 1: Prep the Produce

  1. Wash and dry produce.
  2. Trim and quarter cucumbers lengthwise; slice into ½-inch pieces.
  3. Dice tomatoes.
  4. Halve, peel, and finely chop onions.
  5. Mince or grate garlic.
  6. Trim root end from lettuce and separate leaves.

Step 2: Make the Salad

  1. In a medium bowl, combine cucumber, tomato, 6 tbsp onion (reserve the rest), and vinaigrette.
  2. Toss to coat and set aside.

Step 3: Cook the Turkey

  1. Heat a drizzle of olive oil in a large pan over medium-high heat.
  2. Add remaining onion and a pinch of salt; cook 2–3 minutes until softened.
  3. Add turkey, Turkish spice blend, garlic, and soy sauce.
  4. Cook, breaking up meat, until turkey is cooked through, 4–6 minutes.
  5. Season with salt and pepper.
  6. Tip: Add a splash of water near the end for saucier filling.

Step 4: Assemble the Wraps

  1. Divide lettuce leaves among plates.
  2. Fill each with turkey mixture and cucumber-tomato salad.
  3. Spoon any remaining vinaigrette over top.
  4. Garnish with feta and serve immediately.

Notes

  • Add lemon juice to the salad for extra brightness.
  • Swap turkey for chicken or beef if preferred.
  • For meal prep: store filling and salad separately, assemble when ready to eat.
