Instructions
Step 1: Prep Ingredients & Char Cabbage
- Bring a large pot of salted water to a boil.
- Wash and dry produce.
- Trim and thinly slice scallions, separating whites from greens.
- Peel and mince or grate garlic.
- In a medium pot over high heat, heat a drizzle of oil. Add coleslaw mix and cook, stirring constantly, until lightly charred, 1–2 minutes. Transfer to a plate.
Step 2: Cook the Pork
- In the same pot, heat another drizzle of oil over medium-high heat.
- Add scallion whites and garlic. Cook, stirring, for 20–30 seconds until fragrant.
- Add ground pork, half the sesame seeds, and 3/4 tsp salt.
- Cook, breaking up meat, until browned and fully cooked, 5–7 minutes.
Step 3: Build the Broth
- Stir in Szechuan paste and peanut butter. Cook for 1–2 minutes until combined and fragrant.
- Add pork ramen stock, chicken stock concentrate, and 6½ cups water.
- Bring to a boil, then reduce heat to low. Simmer for 2–4 minutes until slightly thickened.
- Season with salt and pepper to taste.
Step 4: Cook Noodles & Assemble
- Once water is boiling, add ramen noodles and cook for 1–2 minutes until tender.
- Drain and rinse under cold water for 30 seconds.
- Divide noodles between bowls.
- Pour pork broth mixture over noodles.
- Top with charred cabbage, scallion greens, remaining sesame seeds, and chili flakes to taste.
