Instructions

Step 1: Prep Ingredients & Char Cabbage

  • Bring a large pot of salted water to a boil.
  • Wash and dry produce.
  • Trim and thinly slice scallions, separating whites from greens.
  • Peel and mince or grate garlic.
  • In a medium pot over high heat, heat a drizzle of oil. Add coleslaw mix and cook, stirring constantly, until lightly charred, 1–2 minutes. Transfer to a plate.

Step 2: Cook the Pork

  • In the same pot, heat another drizzle of oil over medium-high heat.
  • Add scallion whites and garlic. Cook, stirring, for 20–30 seconds until fragrant.
  • Add ground pork, half the sesame seeds, and 3/4 tsp salt.
  • Cook, breaking up meat, until browned and fully cooked, 5–7 minutes.

Step 3: Build the Broth

  • Stir in Szechuan paste and peanut butter. Cook for 1–2 minutes until combined and fragrant.
  • Add pork ramen stock, chicken stock concentrate, and 6½ cups water.
  • Bring to a boil, then reduce heat to low. Simmer for 2–4 minutes until slightly thickened.
  • Season with salt and pepper to taste.

Step 4: Cook Noodles & Assemble

  • Once water is boiling, add ramen noodles and cook for 1–2 minutes until tender.
  • Drain and rinse under cold water for 30 seconds.
  • Divide noodles between bowls.
  • Pour pork broth mixture over noodles.
  • Top with charred cabbage, scallion greens, remaining sesame seeds, and chili flakes to taste.

Pork Safety Tip: Ground pork is fully cooked when internal temperature reaches 160°F.
