Perfect for busy weeknights or cozy campfire moments, these BBQ chicken quesadillas come together fast. Melty mozzarella, tender chicken, shallot, and tangy BBQ sauce are tucked into tortillas and pan-seared until golden brown. A smoky red pepper crema and a sprinkle of cilantro make every bite irresistible.

Ingredients

Produce

  • 3 shallots
  • ¾ oz cilantro

Pantry

  • 6 large flour tortillas
  • 3 tbsp fry seasoning
  • 12 tbsp BBQ sauce
  • 6 tbsp smoky red pepper crema
  • Butter
  • Cooking oil / olive oil
  • Salt & pepper

Dairy

  • 6 oz mozzarella cheese

Protein

  • 30 oz organic chicken breast

Instructions

  1. Prep produce
    Wash and dry produce. Halve, peel, and finely dice shallots. Roughly chop cilantro.

  2. Cook chicken
    Pat chicken dry with paper towels. Heat a drizzle of oil in a large pan over medium-high heat. Add chicken; season with fry seasoning, salt, and pepper. Cook, stirring occasionally, until browned and cooked through, 4–6 minutes. Transfer to a plate. Wipe out pan.

  3. Assemble quesadillas
    Place tortillas on a clean work surface. Sprinkle half the mozzarella onto one side of each tortilla. Top with chicken, shallot, BBQ sauce, and half the cilantro. Sprinkle with remaining mozzarella. Fold tortillas in half to seal.

  4. Pan-sear quesadillas
    Heat a drizzle of oil and ½ tbsp butter in the same pan over medium heat. Add quesadillas and cook until golden brown, 1–2 minutes per side, adding more butter and oil as needed. Transfer to a paper-towel-lined plate.

  5. Serve
    Cut quesadillas into wedges. Drizzle with smoky red pepper crema, garnish with remaining cilantro, and serve warm.


💡 Notes

  • Ensure chicken reaches an internal temperature of 165°F.
  • For extra crispy tortillas, lightly brush with oil before pan-searing.
  • Adjust sweetness by using a tangier BBQ sauce if preferred.
